Germination, this is a process where a seed after being soaked gives rise to an edible plant which is fuelled by the food energy in the seeds. Shoots can easily be kept in a closed container in the refrigerator for a few days.

All types of seeds, cereals or legumes can grow shoots. Germinated millet, quinoa, broccoli and diakon seed [Japanese radish] deliver the largest health benefits and the easiest species to germinate are: generic aduki beans, alfalfa, feng, green peas, red clover seeds, lentils, quinoa, radish seed, seed grains and mung beans. Also broccoli seed, millet grains, chichpeas [garbanzo] and sunflower seeds are suitable.

Types of shoots:
Adzukikiemen
Adzuki is een Japans familielid van de sojaboon. De adzukikiemen hebben een neutrale smaak en worden dan ook vooral in combinatie met andere kiemen gebruikt (zie kiemmix) vooral in groetenschotels, salades en soepen. Over de rode (adzuki) sojaboon zijn de meningen verdeeld. Reiner Schmidt noemt Adzuki een van de weinige sojabonen die voor kiemen geschikt is. Maar het Duitse ministerie van Voeding vindt dat de kiemen van erwten, kikkererwten en adzukibonen toch beter eerst kunnen worden gekookt of geblancheerd. In het algemeen bevordert koken of stomen de verteerbaarheid. Ze bevatten:
B1, B2, ijzer, kalium.
Sprouting broccoli
Soft broccoli taste with a hint of radish, ideal for salads and sandwiches. The anti-oxidant activity is due to the presence of glucosinolates, isothiocyanates and glucoraphanin.
Alfalfa
This is probably the most popular shoot available and combines with a wide variety of ingredients in many dishes. Alfalfa looks like a mini bean sprout and is extremely healthy due to its vegetable protein and mineral content and the vitamins C, D, E and K.
Lentil sprouts
Lentil sprouts are best steamed. This shoot is easily digested and lends itself well for using in both salads and soups. They contain B1, B2, C AND iron.
Tip: steam for 10 minutes ,sprinkle with olive oil and/or vinegar and then add some oregano, basil, cumin or caraway.
Radish sprouts
A snappy sprout often referred to as ‘hot radish’,the first bite is quite fresh and quickly after the real radish taste comes free .They include A ,B1 ,C ,iron and phosphorus .
Tip: good on sourdough bread with hummus.
Bean sprouts or mung beans
these will be well known to people familiar with Asian cookery ,soft but crunchy ,delicious in vegetable dishes and soups but also good in salads. Wash before use.
Sunflower shoots
A delicious oily/nutty taste , good raw or cooked in salads ,soups and stir-fry dishes ,wash before use .Rich in vitamins C and E ,phosphorous and calcium .
