Ordinary dehydrators produce constant, unchanging heat and cause "hardening of the case", a dry surface with moisture trapped inside - a perfect environment for yeast, mold and bacteria to grow. With Excalibur's adjustable thermostat, you take advantage of Hyperwave ™ Fluctuation (changing the heat through the drying cycle) for faster, better and safer dried foods. As the temperature increases, the surface moisture evaporates. Then the indoor temperature moves as the temperature gets lower towards the drier surface.
